Fish Tweezers for the removal of Salmon Pin Bones (not for fish brows)
Our fish are caught with care and reverence- cut and packed with human hands as fast as our artisan handling allows.
Because of our emphasis on intrinsic flavor and texture retention- we do not allow our fish to "rest" for 48 hours as is the industry standard to allow the fresh caught fish to age and release the pin bones without tearing the delicate flesh. If we attempt pin bone removal any earlier in the process we will have tearing.
Instead we recommend you pull pin bones at home just prior to cooking. We like to bring our fish temp up a bit by counter resting before cooking*- much like you would a fine tenderloin. That's the secret to a nice cook through on the grill.
Honest, we'd love to provide this convenience for you- but in our hearts we feel it's more important to uphold quality and freshness of flavor then convenience.
Tweezers will only be included with your frozen fish order- we will not ship them as a separate order.
